Zucchini Fritters are the perfect accompaniment to any meal. Light and airy and easy to make.
Ingredients:
2 cups zucchini, shredded
2 tablespoons butter
1/4 cup parmesian cheese
2 eggs
1/2 cup bisquick biscuit mix
1/8 teaspoon salt
1/8 teaspoon pepper
1 teaspoon curry powder
Mix together biscuit mix, cheese, salt and pepper. Beat eggs and stir into dry mix. Fold in zucchini.
In meadium skillet melt butter and add 2 tablespoons fritter mixture for each fritter. Fry for 3-5 minutes on each side or until golden brown..
Makes 1o fritters
