Baked Spinach Risotto is an excellent dish any time and one your guests will love. The Italian rice in this recipe makes it a very creamy dish.

Recipe Ingredients:

1 tablespoon olive oil

1 onion, chopped

1 green pepper, chopped

2 garlic cloves, minced

1 cup arborio rice ( a short grain Italian rice)

3 cups fresh spinach leaves, chopped

14 ounces chicken broth

1/2 cup parmesian cheese, grated

1 tablespoon green pepper sauce

1/2 teaspoon salt

In a medium saucepan heat olive oil over medium heat. Add green pepper, onion and garlic and cook for 5 minutes. Add rice stirring in to coat well then add spinach leaves and chicken broth. Stir ingredients well then add 1/4 cup parmesian cheese, green pepper sauce and salt. Pour mixture into a greased 2 quart casserole dish and and sprinkle top with 1/4 cup parmesian cheese. Bake at 400 degrees for 40 minutes or until rice is tender.
