Ingredients

2 cooked chicken breasts, chopped

1/2 cup fresh cranberries, chopped

2 stalks celery, chopped

1 teaspoon lemon juice

1/2 cup mayonnaise

2 tablespoons fresh tarragon, chopped

Salt and pepper to taste

Romaine lettuce

Directions:

Grill the chicken breasts until done and juices run clear. Let chicken cool and then chop into  1/2 inch chunks.

Place chicken with all other ingredients in a large bowl and fold together well. Place a bed of romaine lettuce on your dishes and spoon salad onto the lettuce. Garnish with tomato wedges or cherry tomatoes. Salad also makes a killer sandwich.
