Italian Wedding Soup is a classic and one the whole family will enjoy.

Recipe Ingredients:

1 pound chicken breast, cubed

1 pound lean ground beef

2 stalks celery, chopped

2 carrots, chopped

1 medium onion, chopped

20 ounces of chipped frozen spinach

8 chicken bullion cubes

1 pound acini de pepe

1 clove of garlic, minced

In a large pot add 2 quarts of water and add chicken, celery, carrots and onion. While this is cooking brown the ground beef. Cook and drain spinach and set aside. Chunk up ground beef then drain well when browned and add to spinach. Add beef and spinach to soup and add 2 more quarts of water. Bring water to a boil and add acini de pepe and continue to boil for 12 minutes.
