Maryland Roasted Scallops and Mushrooms
This Maryland Roasted Scallops and Mushrooms recipe is very quick and easy to make but you won;t believe how delicious it is.
Recipe Ingredients:
2 pounds Large Scallops
2 tablespoons olive oil
3 tablespoons butter
1 pound portabello mushrooms, chopped
2 tablespoons thyme leaves
1 teaspoon tarragon, chopped
Directions:
Rinse the scallops well and then dry them thoroughly. Season scallops lightly with salt and pepper. Heat the olive oil in a large saute pan on medium heat and then place the scallops in the pan. Cook scallops until browned on both sides, about 3 minutes.
Next add 1 tablespoon butter and lower the heat a little. As the butter melts baste the scallops with it. After two minutes ( one minute each side) remove from pan and place on plates. Next melt the remaining butter in the pan and add tarragon, thyme and portabello mushrooms. Saute until the the mushrooms are just getting heated then spoon over plated scallops. Serve.
