Bacon Wrapped Scallops & Teriyaki Glaze Recipe
Bacon Wrapped Scallops
Bacon Wrapped Scallops with Teriyaki Glaze make a great meal or an awesome appetizer. This is my own personal recipe and I guarantee your guests and family will love this dish.
Recipe Ingredients:Teriyaki
1 pound of large scallops ( 10 scallops )
10 slices bacon
cracked black pepper
1/2 cupĀ teriyaki sauce
1/4 cup pineapple juice
1/4 cup white wine
1/2 stick butter
2 shallots, minced
Directions:
To make the glaze melt the butter in a medium sauce pan and add in the teriyaki sauce, pineapple juice and white wine. Let this mixture come to a boil then reduce the heat and let simmer until it thickens. While glaze is thickening lay out the bacon strips and sprinkle them generously with cracked pepper.
Cook bacon off about a quater of the way and remove from pan. The bacon will still be very flexible. Wash your scallops off well and pat dry. Wrap each scallop with a piece of bacon and secure with a tooth pic. Place scallops on broiler pan and brush tops and sides with thickened glaze.
Broil on one side for 5 minutes then remove and turn scallops over. Brush again with glaze and cook for another 5 minutes under the broiler. In a small sauce pan cook the minced shallots with a little butter until golden brown. Remove scallops from broiler brush final time with glaze and sprinkle minced shallots over top and serve.
