Beef casserole is great for a quick dinner when you’ve had a long day at work. It can be frozen as well which means you can prepare it well ahead of time.
Recipe Ingredients:
1 pound ground beef
1 garlic clove, minced
1 tablespoon dry onion
2 teaspoons oregano
1/2 pound fresh mushrooms, diced
1 can cream of celery soup
1/2 cup uncooked rice
10 ounces of spinach, chopped
1 cup sour cream
salt and pepper to taste
Cook off vegetables in a medium sauce pan and drain. Brown and drain ground beef. Mix all ingredients together and place in a 2 quart casserole dish. Cook at 350 degrees for 15 minutes.
