Raisin Bread Pudding is an excellent finish to a great meal. Give it a try your family will love it. This is a microwave recipe.
Ingredients:
4 slices of raisin bread cubed ( look in here for the raisin bread recipe )
1/4 cup raisins
3 eggs
1/2 cup brown sugar
1 teaspoon vanilla
2 cups milk
2 tablespoons butter
cinnamon
In a 2 quart microwave safe casserole dish mix the raisin bread and raisins. Set aside. In a medium bowl add eggs and beat well then add sugar and vanilla and blend in. In a medium sauce pan heat the milk and butter until steaming hot. Gradually stir in the egg mixture to the milk mixtue and then pour over bread in casserole dish. Sprinkle the dish with cinnamon and place a piece of wax paper over the dish. Set the microwave to cook at 50%. Place dish in microwave and cook for 12-14 minutes. For best results let sit while you eat dinner and serve warm for dessert.
