Butterscotch rolls are a treat for the kids and are wonderful right out of the oven on a cool winters day.
Ingredients:
2 1/4 cups milk
2 yeast cakes
1/4 cup sugar
1/2 cup butter
7 cups flour
Scald milk and melt butter in it as it cools. When milk is luke warm mix in sugar and yeast. Add beaten eggs and beat in flour and salt until you have a soft dough. Sprinkle dough with flour and pat into a ball, place in mixing bowl . Cover bowl and place in the fridge for 3 hours.
Mix together 1 cup of light brown sugar and 1/4 cup of butter and put one spoonful in the bottom of each section of a greased muffin tin.
Roll your dough out into an oblong shape about 1/4 inch thick. Spread with butter and sprinkle cinnamon. Roll into a long log and cut into 1 inch pieces. Place in oven tins and let rise for 2 hours at room temperature. Bake in 400 degree oven for 25 minutes.
