Another great summer casserole found on many tables in maryland. This Zucchini Casserole Recipe is quick and easy and very delicious.

Recipe Ingredients:

1 cup red onion, sliced

1 cup green pepper, sliced

1/4 cup butter

2 cups zucchini, sliced in 1 inch pieces

4 tomatoes peeled and cut into wedges

Salt and pepper to taste

Parmesan cheese

Preheat oven to 375 degrees. In a medium saucepan saute onion and pepper in butter until tender. When the onions and pepper are tender add in the zucchini and cook another 5 minutes. Add tomatoes and cook until soft. Season the vegetables with salt and pepper then place them in a 1 quart casserole dish. Sprinkle dish with parmesan cheese and bake until browned.
