Another squash recipe that is light and easy to make. This Yellow Squash Casserole is great for those days when you need a light refreshing dinner that will please the family without stuffing them.

Recipe Ingredients:

2 pounds yellow squash, diced

1 carrot, grated

2 teaspoons pimento

1 can cream of chicken soup

1/2 pint sour cream

1/2 cup butter

Bread crumbs

Salt and pepper to taste

In a large pot boil the squash until tender then drain and let cool. Place squash in a large bowl and add pimento, carrot, soup and sour cream. Add salt and pepper to taste and mix together well. Now melt your butter and mix with bread crumbs. Place half of the bread crumb mixture in the bottom of a 2 quart casserole dish then add squash mixture on top. Finish by adding the last of the bBake for 30 minutes at 375 degrees.
