Scalloped Eggplant is another great side dish that goes well with any meal.
Ingredients:
1 large eggplant, diced
1/2 cup milk
1 can cream of mushroom soup
1 egg, beaten
1 cup onion, chopped
1 1/4 cups herb seasoned stuffing
2 slices bread, cubed
2 tablespoons butter, melted
1 cup sharp cheese, shredded
Cook eggplant in boiling water for ten minutes or until tender. Drain eggplant and place in large bowl. Add all the ingredients except the stuffing, bread, butter and cheese. Pour mixture into casserole dish. in a medium bowl toss bread cubes and stuffing mix with melted butter. Sprinkle stuffing mixture over casserole and top with shredded cheese. Bake at 350 degrees for 25 minutes.
