Nothing says summer like a fresh helping of garden vegetables on the table. This Maryland Garden Vegetable Casserole is just the trick for a scumptious meal. This dish will also make a great addition to any party or pot luck event.

Recipe Ingredients:

3 yellow squash, sliced

3 tomatoes, quatered

1 green pepper cut in half then sliced

2 onions, sliced thin

1/2 cup instant rice

4 tablespoons butter

Salt and pepper to taste

In a 2 quart casserole dish layer all the ingredients alternately. Squash, tomatoes, peppers, onions and rice taking care to add butter and seasonings to each layer. Bake covered in a 350 degree oven for 1 hour.
