There is nothing like fresh eggplant and this Maryland Eggplant Casserole recipe is sure to be a hit on your families dinner table.

Recipe Ingredients:

1 large eggplant

1/2 cup onion, chopped

1/4 cup green peppers, chopped

6 tablespoons butter

1/2 teaspoon salt

1/8 teaspoon pepper

1 cup cheddar cheese, grated

2 slices of bread cubed

10 ritz crackers

Preheat oven to 350 degrees. Peel your eggplant and cut into 1 inch cubes. Boil the eggplant cubes in 1 cup of water and 1/4 teaspoon of salt until tender. Saute peppers and onions in butter over low heat until tender. Add remaining salt, pepper, grated cheddar cheese and bread cubes to the sauted onions and peppers stirring well. Then remove from heat. Add cooked eggplant cubes to the mixture and pour into a 2 quart casserole dish. Crumble the ritz crackers and saute in butter until coated well. Sprinkle crackers on top of casserole and bake for 25 minutes or until bubbling.
