Eggplant Casserole works great as a main dish or a side dish. So delicious and very easy to make makes this dish a sure fire way to get them to the table.

Recipe Ingredients:

2 eggplants

1 green pepper, chopped

1 cup celery, chopped

4 fresh tomatoes

bread crumbs

1 cup mozzarella cheese, grated

1/4 stick butter

1/4 cup parsley, chopped

salt and pepper to taste

Peel and dice eggplant then boil eggplant and celery together until tender. Saute green pepper in butter. Slice tomatoes. In a 2 quart casserole dish cover the bottom with eggplant and celery then layer tomatoes and green pepper and sprinkle with some cheese. Keep layering until out of ingredients then place bread crumbs on top and sprinkle with cheese. Cover and bake for 20-30 minutes until all vegetables are tender.
