It’s summertime and with all those fresh vegetables available some great meals can be made. This Zucchini Squash Casserole Recipe is a great example of a delicious dish you can serve tonight.
Recipe Ingredients:
10 zucchini squash
1/2 cup butter
3/4 cup cheddar cheese
1/4 cup swiss cheese
1 cup sour cream
1/2 teaspoon salt
1/4 cup chives
1/2 teaspoon paprika
1 cup bread crumbs
parmesan cheese
Preheat oven to 350 degrees. Slice zucchini into 1 inch thick slices. Cook zucchini in boiling water for 5 minutes and then drain. In a large sauce pan melt butter and add in sour cream, cheeses, salt and paprika. Place squash in a 3 quart casserole dish and pour sauce over top. Sprinkle bread crumbs on top and grate fresh parmesan cheese on top of bread crumbs. Bake for 20 minutes until thouroughly heated and bubly on top.
