Ingredients:
4 pounds potatoes, peeled
1 pound bacon, cooked and chopped
1 stick butter, softened
1/2 cup green onions, chopped
2 cups cheddar cheese, grated
2 cups sour cream
1 tablespoon black pepper
1 teaspoon salt
Directions:
Place peeled potatoes in a large pot and fill with water. Boil potatoes for 20 minutes or until tender. Remove from heat and drain. Place in a large bowl and chill for 2 hours. When chilled cut into 1 inch pieces. Place potatoes back in large bowl and add in the remaining ingredients folding together well. Chill at least 2 more hours before serving.
Makes 2 quarts

Ingredients:
2 pounds red potatoes
1/4 cup mayonnaise
2 tablespoons Dijon Mustard
10 slices bacon, cooked and chopped
1/2 cup green onions, chopped
salt and pepper to taste
Directions:
Cut the potatoes in quarters and boil them over low heat for 20 minutes. Drain and place in large bowl. In a medium bowl add the mayonnaise, Dijon Mustard, onion and bacon. Mix well then pour over the potatoes. Fold the potatoes into the mixture and chill for 2 hours before serving.
