Ingredients:

1/2 cup butter

1/2 cup celery, chopped

1/2 cup onion, chopped

2 1/4 chicken stock

2 cups medium shrimp, peeled, deveined & uncooked

1 cup oysters, raw

14 ounces cubed herb flavored stuffing mix

1 cup cornmeal

1 cup all-purpose flour

1 large egg

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper


Directions:

Pre-heat oven to 350 degrees.

In a large saute pan melt the butterover medium heat and add in the celery and onion, Cook until celery and onion are tender. Pour the onions, celery and butter into a large bowl then stir in the chicken stock, shrimp, oysters, stuffing mix, cornmeal, flour, egg, baking powder, salt and pepper. Mix well then stuff into your turkey or chicken or spoon into a 2 quart casserole dish that has been greased. If cooking in casserole dish bake for 30 minutes at 350 degrees until the top is a golden brown.
