No one makes seafood gumbo like Marylanders do. Maryland Seafood Gumbo is an explosion of flavor and all the seafood you could ever want. Great any time of the year.

Recipe Ingredients:

2 quarts water

2 pounds shrimp, peeled and deveined

3 pounds rockfish, skinned ( cod or flounder can be substituted)

2 pounds crabmeat ( claw meat is great)

1 pound of oysters

2 tablespoons hot sauce

1 tablespoon old bay seasoning

2 cups all purpose flour

2 cups crisco

1/4 cup butter

2 cups onion, chopped

2 cups red pepper, chopped

2 cups celery, chopped

3 cups potatoes, diced

4 cups stewed tomatoes

3 cups rice

In a large soup pot bring 2 quarts of water to a boil and then add in the rockfish, shrimp, crabmeat and seasonings. Just before removing from the heat. Remove the fish and flake it. Prepare a roux with the crisco and flour in a medium saucepan. Stir until golden brown. Now place roux in stock pot and mix in well. In a large saute pan saute your vegetables in butter then combine with other ingredients in the stock pot. Add the stewed tomatoes and the rice and let simmer for 40 minutes.
