Ingredients:
Crust:
1 3/4 cups crushed chocolate graham crackers
4 tablespoons butter, melted
Filling:
3 white chocolate baking bars, broken into chunks
8 ounces cream cheese, softened
3/4 cup sugar
2 teaspoons vanilla extract
3 eggs
2 ounces semi sweet baking chocolate
Directions:
Preheat oven to 350 degrees. Mix graham cracker crumbs and melted butter together well in a medium bowl. Once mixed press into the bottom of a 9 inch springform pan. Bake for 10 minutes then remove and let cool.
In a double boiler melt the white chocolate bars. Continually stir until melted and smooth and then let stand at room temperature.
In a medium bowl beat the cream cheese, sugarand vanilla extract together well until smooth. Next beat in eggs and then gradually beat in the melted white chocolate. Pour this mixture into the chocolate crust and spread evenly.
Bake for 40 minutes at 350 degrees. Center will still move slightly to touch. Grate the dark semi sweet chocolate over top and chill for 2 hours.
