Ingredients:

4 tablespoons butter

3 cups fresh cranberries

2/3 cup walnuts, chopped

1/2 teaspoon ground cinnamon

1/3 cup fresh orange

2 tablespoons fresh lemon

2 cups banana, mashed

3/4 cup brown sugar, packed

1/4 cup sugar

3 large egg whites

1 large egg

2 cups all-purpose flour

2 cups whole-wheat flour

4 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

Directions:

Melt butter in a saucepan over medium heat and add in cranberries, walnuts and cinnamon. Cook for 10 minutes until cranberries begin to pop then remove from heat.

In a medium bowl mix together oranges, lemon juice, banana, brown sugar, sugar, egg whites and 1 egg. In another bowl mix together all the dry ingredients and then combine with the egg mixture making sure to mix well.Now fold in the cranberry mixture gently as to not break up the cranberries.

Pre heat oven to 350 degrees.

Grease 2 loaf pans that are 9x5x3 and pour mixture into each pan. Bake for 1 hour or until inserted toothpic comes out clean

Makes 2 loaves of bread.
