Ingredients:

5 large fresh tomatoes, peeled and chopped

6 tablespoons olive oil

1/4 teaspoon dried chili powder

1 medium onion, finely chopped

2 garlic cloves, finely chopped

2 tablespoons fresh basil, chopped

3 cups water

3 cups beef stock

freshly ground black pepper to taste


Directions:

Add olive oil to a large saute pan and then add in the chili powder, onion and garlic. Cook until the onion is tender and translucent. Add in the tomatoes and basil. Simmer over medium heat for 15 minutes. Add in the water and beef stock and again bring to a simmer over low heat for 20 minutes, while stirring well.

Serve hot with freshly ground black pepper on top
