Recipe Ingredients:

1/2 cup flour

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon old bay

1/2 pound fresh scallops

6 boneless, skinless chicken breasts cut in half

1/4 cup olive oil

1 1/2 cups fresh mushrooms, sliced

1 medium onion, chopped

1/4 cup white wine

2 teaspoons cornstarch

1 teaspoon dried tarragon

1/2 cup swiss cheese, shredded

1/2 cup whipping cream

In a large zip lock bag combine flour, old bay, salt and pepper. Add chicken and scallops and shake to coat well. In a large skillet saute the chicken and scallops in olive oil until golden brown. Transfer the chicken and scallops to a greased 9×13 . Leave drippings in skillet and saute the mushrooms and onion. Add wine and bring to a boil. Cook until liquid is reduced to a few tablespoons. In a small bowl combine cornstarch, whipping cream and tarragon until blended. Add to skillet and boil while stirring for 1 minute. Spoon mixture over scallops and chicken. Sprinkle scallops and chicken with shredded Swiss cheese. Bake uncovered for 20 minutes at 375 degrees.
