Recipe Ingredients:

10 large chowder or quahog clams, rinsed, sand and grit removed

3 Tbsp minced onion

1/2 cup butter

2 Tbsp chopped fresh parsley

1 clove garlic, minced

1 Tbsp lemon juice

1 cup bread crumbs

1 Tbsp clam juice

Salt and freshly ground pepper to taste

1/4 cup grated Parmesan cheese

Fill a large pot with 3 inches of water and bring to a boil. Add clams to the water and reduce to a simmer. Let the clams cook for 5-10 minutes, they will open when they are done. If a clam doesn’t open discard it as it was dead before cooking. Remove clam meat from shells and mince it. Break the clam shells into halves and clean out with hot water and set aside. In a saute pan add the butter and minced onion, cook until tender then add the garlic and let cook for another minute before adding the minced clams, parsley, bread crumbs, lemon juice and clam juice. Mix well until bread crumbs are moist. Sppon the stuffing mixture into the clam half shells and sprinkle the tops with Parmesan cheese. Bake in the over for 15 minutes and serve.
