This Chesapeake Bay Scallops Au Gratin recipe is quick and easy to make and full of flavor. The family will be running for the dinner table tonight.
Recipe Ingredients:
2 pounds fresh scallops
1 stick butter
2 large cloves of garlic, minced
2 medium shallots, minced
4 ounces sliced prosciutto ham, chopped
6 ounces Swiss cheese, grated
3 tablespoons fresh parsley, minced
2 tablespoons lemon juice
2 teaspoons Old Bay seasoning
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons olive oil
1/2 cup bread crumbs
1/2 cup dry white wine
Preheat oven to 350 degrees. In a medium saute pan add the olive oil, garlic, shallot, prosciutto, parsley, lemon juice, Pernod, salt, and pepper. Cook on medium heat until shallots and garlic is translucent and the ham is browned.
Clean the scallops and pat dry. Place them into the bottom of a shallow 2 quart casserole dish evenly. Pour the white wine over top of the scallops. Spoon the olive oil mixture evenly over the scallops and place in the oven for 20 minutes. Remove from oven and top with bread crumbs mixed with Swiss cheese and sprinkle parmesan cheese on top and place under broiler until crusty and browned.
