This is in my estimation the perfect summer dish. Light fare like this is easy to make and makes a great impression on your guests. This Grilled Eggplant & Mozzarella Salad Recipe is a winner and I’m sure you’ll agree.

Recipe Ingredients:

4 small eggplants, cut into 1/2 inch slices

4 tablespoons olive oil

1 teaspoon salt

2 teaspoons freshly ground black pepper

1/2 pound  mozzarella, cut into ¼ inch slices

4  tomatoes, sliced

¼ cup fresh basil leaves

Italian seasoning

Brush both sides of the eggplant with olive oil and sprinkle with salt and pepper. Grill over hot coals for 3 to 4 minutes per side, until the eggplant is tender. Arrange on individual serving plates, alternating slices of mozzarella and tomatoes. Sprinkle with Italian seasoning Serve while eggplant is still warm.
