Zucchini Pie is a summertime favorite with fresh picked zucchini.More like a quiche than a pie but very good.
Ingredients:
3 cups zucchini, thinly sliced
1 cup onions, chopped
1 cup bisquick biscuit mix
4 eggs
1/2 cup olive oil
1 teaspoon parsley
1/2 cup parmesian cheese
salt and pper to taste
Beat eggs and mix all ingredients by hand and pour into 12 inch pie plate. Bake for 30 minutes at 350 degreesw or until top is golden brown.
