Ingredients:
5 strips of bacon
1 onion, sliced
1 tablespoon butter
4 potatoes, sliced
1 can condensed cream of mushroom soup
2/3 cup milk
1/8 teaspoon ground black pepper
Directions:
In a large saute pan cook the bacon and then drain. Set aside until cool.In the same pan melt the butter and cook the onion until tender. Once onion is ender stir in the potato slices, milk, and pepper. Bring to a boil then reduce heat and let simmer covered until the potatoes are tender 15-20 minutes. Crumble bacon over top before serving.

Rice Stuffed Tomatoes makes for a great light lunch or dinner meal that is delicious. Quick and easy to make so you can spend your time doing other things than slaving in the kitchen.
Recipe Ingredients:
6 large tomatoes, firm and ripe
1/2 cup onion, minced
2 tablespoons butter
1/2 cup milk
2 cups sharp cheddar cheese, grated
2 cups rice, cooked
1 teaspoon salt
1/2 teaspoon marjoram
1/2 teaspoon oregano
1/4 cup butterd bread crumbs
Cut the top off of each tomato and scoop out center. It’s important that you get very firm yet ripe tomatoes. In a medium saucepan cook onions in butter until tender then add milk and heat thoroughly. Remove onions from heat and add cheese, rice and seasonings. Stir lightly until cheese is melted. Fill tomatoes with mixture and sprinkle the top with buttered bread crumbs. Place tomatoes in a rectangular baking pan with 1/4 inch of water at the bottom. Place in the oven and cook at 350 degrees for 30 minutes.
