Curried Coconut Shrimp Recipe

Ingredients:

1/2 cup coarsely shredded coconut, preferably unsweetened

3 tablespoons canola or peanut oil

1 medium yellow onion, finely diced

2 tablespoons coarsely chopped ginger

1 teaspoon kosher salt; more to taste

2 teaspoon Madras hot curry powder

3/4 cup canned diced tomatoes with their juices

3/4 cup coconut milk

Freshly ground black pepper

1 pound shrimp,peeled and deveined

1/3 cup chopped fresh cilantro

2 tablespoons fresh lime juice


Directions:

In a 12-inch skillet over medium heat, toast the coconut, tossing often, until lightly browned, 2 to 5 minutes. Transfer to a plate.

Heat 1-1/2 tablespoons of the oil in the skillet over medium heat until shimmering hot. Add the onion and ginger, sprinkle with 1/2 teaspoon of the salt, and cook, stirring, until softened, 3 to 5 minutes. Add the curry powder and cook, stirring, for 1 minute. Add the tomatoes and coconut milk and cook, stirring, until the mixture reduces slightly, 3 to 5 minutes.
Transfer to a blender and purée. Season to taste with salt and pepper.

Toss the shrimp with the remaining 1/2 teaspoon salt and several grinds of pepper. Rinse and dry the skillet. Set over medium-high heat until hot, 1 minute. Add the remaining 1-1/2 Tbs. oil and once it’s shimmering hot, add the shrimp. Cook without touching for about 2 minutes, allowing the shrimp to brown nicely. Flip and cook until they turn almost completely pink (but are not quite cooked through), about 1-1/2 more minutes.

Add the curry sauce and simmer, stirring, until the shrimp are cooked through and the sauce is hot, 1 to 2 minutes. Stir in half of the cilantro and half of the lime juice. Season to taste with more salt, pepper, and the remaining lime juice. Serve sprinkled with the toasted coconut and the remaining cilantro.

Prawn Curry Recipe


Ingredients:

1/2 lb prawns shelled and de-veined

2 T cumin seeds

1 T coriander seeds

1 T sesame seeds

1 T poppy seeds

1/2 t mustard seeds

1/4 t fenugreek seeds

1/2 t turmeric powder

6 large dried red chillies-washed and soaked in water to soften

8-10 green chillies

1 large onion

4 medium tomatoes

2 T shredded coconut powder

1 T tamarind pulp

1/2 cup coconut milk

2 potatoes

1/2 cup cooking oil

1-2 stalks of curry leaves

Salt to Taste

Directions:

Dry roast all seeds and cool; add shredded coconut and grind to a powder. Keep aside. In a pan heat 2T oil, saute onion, when transcluent add tomatoes and green chillies, saute a bit. Transfer to a blending jug, add ground spices, turmeric,
red chillies with the water it was soaked in. Blend to a smooth paste. Add additional water if required.

Heat oil in the same pan used for sauteing, add curry leaves, blended paste and fry till the liquid evaporates and the oil separates from the paste. Add veges and salt cook for a couple of minutes. Add water as much gravy desired (1-2
glasses) cover and simmer till vege is half done, add prawns, tamarind pulp and coconut milk, cover and simmer till done. Serve with boiled rice.
