Ingredients:
2 cups fresh sweet potatoes, peeled and chopped
1 cup onions, chopped
1 cup celery, chopped
2 tablespoons butter
1/4 cup parsley, chopped
1 teaspoon ground ginger
5 cups crumbled cornbread
1/4 chicken broth
Directions:
In a large saucepan cook the sweet potatoes, onion and celery in butter until everything is tender, about 8 minutes. Pour mixture into a large bowl then stir in the parsley and and ginger. Once mixed well add in the cornbread and chicken broth. mix together well until everything is nice and moist. Place the stuffing in your turkey or chicken or place in a 2 quart casserole dish and bake at 375 degrees uncovered for 45 minutes.
