Ingredients:
1 loaf white bread, stale
2 tablespoons butter
1 large onion, chopped
2 large ripe Bartlett pears, cored, peeled, and chopped
3/4 cup chicken stock
1/4 cup butter
1 cup pecan halves, toasted and chopped
2 tablespoons parsley, chopped
1/4 teaspoon nutmeg
1/8 teaspoon salt
Dash freshly ground black pepper
Directions:
Pre-heat oven to 350 degrees.
In a large saute pan melt the butter over medium heat and cook the onions, and pears until tender. In a medium pot bring the chicken stock and 1/4 cup of butter to a simmer. In a large bowl break up all the dried bread into small pieces or cubes. Pour the chicken stock and butter over top and toss well untill all is moist. Ad the pear/onion mixture to the bowl along with the nutmeg, parsley, pecans, salt and pepper, mix well. You can stuff turkey or chicken and cook as you normally would or place stuffing in a 2 quart casserole dish and bake covered for 40 minutes until heated throughout.
