Oyster dressing is a holiday favorite in Maryland and one beloved along the East Coast of America.

Ingredients:

2 large stalks of celery, chopped

1 medium onion, chopped

1 stick butter

1 teaspoon salt

1/2 teaspoon lemon and pepper seasoning

1/8 teaspoon mace

1/8 teaspoon tarragon

1/8 teaspoon poultry seasoning

1/2 teaspoon lemon juice

1 pint oysters, shucked

8 slices dry bread, cubed

Saute onions and celery in butter in medium sauce pan until tender. Add in seasonings and oysters along with the oyster juice. Simmer until oysters begin to curl at the edges. Remove from heat and mix in bread cubes.

Makes 4 cups of dressing.
