Dressing isn’t just for Thanksgiving or Christmas. A lovely chicken or turckey make for a great sunday meal and this Maryland Cornbread Recipe is sure to become your favorite dressing to go with it.
Recipe Ingredients:
2 cups cornbread, crumbled
2 yeast rolls crumbled
2 cups seasoned turkey/chicken broth
1/2 cup buttermilk
1/4 teaspoon baking soda
4 eggs, beaten
1/2 cup turkey or chicken fat
1/2 cup butter, melted
4 large stalks celery, chopped
2 onions, chopped
Crumble cornbread and rolls into a large bowl. Pour heated broth over bread and let stand until bread is softened. Add in celery, onions, fat, butter, milk and eggs then using your hands knead everything together well. While kneading have someone add a little salt and pepper to taste. Either place the mixture into a 2 quart casserole dish or use to directly stuff your chicken or turkey. If casserole dish method place in oven at 350 degrees and bake about 1 hour or until brown. If stuffing turkey or chicken cook as usual according to the weight of the bird and check with a thermometer.
