Ingredients:
1 1/2 pounds fresh sweet cherries
1 pound sweet or Italian sausage
1/4 cup butter
1 large onion, chopped
4 stalks celery, chopped
6 cups cornbread, crumbled
1 can chicken broth
1 egg
3 tablespoons rosemary, chopped
Salt and pepper to taste
Directions:
Wash cherries thoroughly and then drain well making sure to remove all moisture. In a medium saute pan crumble the Italian sausage and cook until nicely browned, around 10 minutes. Remove the sausage from the pan, drain well and set aside. Place the butter in the pan and melt then add in the onion and celery and cook until tender.
In a large bowl mix together the cooked onion and celery along with the cornbread, rosemary, chicken broth, salt and pepper. Add in the egg and mix together thouroughly until you have a dough like consistancy. Now fold in the cherries gently as to not break them apart.
Now you can stuff your turkey or chicken. Or you can place the mixture in a 2 quart casserole dish and cook at 350 degrees for 1 hour or until nice and brown on top.
This recipe will be enough for a 16 pound turkey or can serve 10 people.
